Description

In this book, dietician Marina Ribas shares recipes for people following a ketogenic or low-carbohydrate diet. She uses traditional ingredients typical of the Mediterranean diet, primarily vegetables, olive oil, products made from goat’s and sheep’s milk, dried fruit and nuts, fish, eggs and poultry. Her approach is based on real foods that are easy to find and don’t have a negative environmental impact. She avoids the use of ingredients such as highly processed meat, low-quality dairy products and sweeteners, which have no place in a healthy diet.

Following a brief introduction to the basic principles of a ketogenic diet (distribution of macronutrients, recommended foods and foods to be avoided) and its benefits, she sets out the principles of the keto- Mediterranean diet, in which she stresses the importance of a diet rich in plant-based foods, drawing on seasonality, the principle of sustainability and 0 km foods.

The book includes more than 80 recipes including bread and dough, soups and dips, sauces and seasonings, vegetables, eggs, fish and seafood, meat, and desserts. Marina Ribas (Ibiza, 1989)

is a dietician who enjoys creating and sharing content related to healthy eating, and gives cookery talks and workshops for children and adults. She is the creator of www.marinaribas.es, a website where, in addition to her recipes, she publishes information and articles on health, nutrition and lifestyle issues.
She became interested in nutrition as a possible solution to her own health problems and those of her family. She discovered the ketogenic diet 8 years ago, after her husband was diagnosed with diabetes. This diet became a vital tool to manage the disease, and there is growing evidence of its usefulness in the treatment of a range of conditions.
